Just build a box and put it on a trailer and define it as "load". No problems with authorities if you fix the load properly

Search the web for insulated FRP panels or search for companies building refrigerated trucks and waggons/trailors/shelter, they need these panels.

Doors: Doors on the side will get dirty (mud), entry on the backside is better
Surface: I used 2components UV-resistant marine primer and on top yacht lacquer
you should also take into consideration where you want to go with the trailer:
- bad dirty roads --> move the entry to the back to avoid a lot of dirt/mud on the doors
- rainy areas --> you should have the possibility to cook coffee or tee inside in the morning and have breakfast under roof

even if I only have a frigde, my battery was empty after 3 days in the forest. For this reason a small upgrade was necessary: change of battery from 45Ah to 60 Ah und solar module from 40W to 100W
the result of my first test: after 8 days fridge on with beer inside the battery ist still OK...
