It's not just the airing down, it's how you drive. Straight you're pretty safe but hard turns or off camber and you could be in trouble. The tire manufacturer will have a table with weight, tire pressure and max speed.
I regularly aired down to 70psi for comfort and 40 psi for soft stuff with the 315 22.5 80. That tire is too narrow. Sure you're not going to go down to 10 psi with it!
Before you go to the r20s, do you plan South America? R20s are unavailable in South America. Strange but true. A 365 or 395 22.5 is a better choice for 99% of your driving.
The exhaust brake is probably quite effective on a bare chassis. On a fully built out 917 it will require slow descents at high revs to hold you back. I am guessing it is the 12' wheelbase. Our MB 917 had a 12' wheelbase with an 18' habitat. Very stable with a great turning circle.
Jabsco or Shurflo 12V water pump. Simple.
We had an Isotemp hwt in our truck. The first one lasted more than 20 years. The second is more than 10 years old. Great product.
I had 315 80 22.5 tires on our MB917 At 9400kgs they are not wide enough. Go to at least 365's.
As for a specific tire you want an "all position" tire. Look at tires designed for construction and logging vehicles.
