Last update from yesterday... Valuable lesson learned today, never put final framework up before galley wall is installed. Just worked two hours getting the darned thing in there. Cut the counter top. Not a final cut as I still have welding to do above it on the door, but it is in and fits...

Lookin' good! I'd say two windows would be better for camping, but having one window only definitely contributes to the stealth factor. I may have missed it, but what is your axle type (Torsen?) and rating, and what's your ground clearance?

I'd rather be able to see around a trailer than over it. Something about seeing any part of a trailer prominently in the rearview mirror gives me a more 'secure' feeling. I guess it's being able to instantly see the state of the trailer relative to the tow vehicle... How it is/isn't moving...

Well this really looks nice, and will make keeping the kitchen clean easier. It is water proof and supposed to be fire retardant. One thing it does is increase time on the build.
