Careful of how much weight you put behind the rear axle. Being a short bed that will be easy to do.
Personally I would just go with a regular cab long bed and add the AEV stuff if that's your thing. I think the Ute flatbeds are overpriced anyways
I would do two max air fans. One at the front and one at the back so you can push air in with one and pull air out with the other. With some good insulation you should be okay but definitely test it out to make sure.

I didn't realize the gas cab and chassis is derated. It hasn't been a problem for me but I have a diesel cab and chassis, the power and torque seem fine to me, and I am coming from a tuned 12 valve cummins.

One issue I see with ER and the one that broke down in Costa Rica is the fact that the Ford f 550 is designed with dual rear tires. Having the singles in the back spaced far outside axle might possibly contribute to extra wear and tear on the rear axle and associated components.

Pretty much all of Mexico sells ULSD so I don't see the problem there. The emissions equipment at least on the newer 6.7 cummins engine is pretty reliable.
