Careful of how much weight you put behind the rear axle. Being a short bed that will be easy to do. Personally I would just go with a regular cab long bed and add the AEV stuff if that's your thing. I think the Ute flatbeds are overpriced anyways

I would do two max air fans. One at the front and one at the back so you can push air in with one and pull air out with the other. With some good insulation you should be okay but definitely test it out to make sure.

Nitto RIdge Grappler is only 2 ply tires(EDIT: Sidewall), so something to be aware of. Most heavy duty tires for 17" do not come with a very high load range except the 37x13x17 Toyo Mt rated at 4300lbs at 65 psi I imagine if you wanted to go through with it you could probably sell your 17's...

I didn't realize the gas cab and chassis is derated. It hasn't been a problem for me but I have a diesel cab and chassis, the power and torque seem fine to me, and I am coming from a tuned 12 valve cummins.

One issue I see with ER and the one that broke down in Costa Rica is the fact that the Ford f 550 is designed with dual rear tires. Having the singles in the back spaced far outside axle might possibly contribute to extra wear and tear on the rear axle and associated components.

Is that with the camper on? If so, that's fantastic mileage. I get 13 mpg with my set up chassis cab 4.10 gears 37's occasionally 14 mpg

Pretty much all of Mexico sells ULSD so I don't see the problem there. The emissions equipment at least on the newer 6.7 cummins engine is pretty reliable. I will add I also am not impressed with four wheel campers.
