Haven't ridden in a Dodge, but I'm 6'4" and took a 4 hour road trip in the back of a buddy's 2014 F-150. I was perfectly comfortable back there and I believe the new ones have even more space.
Honestly it was more comfortable than riding shotgun in a midsize vehicle.

I doubt door panels, and their pockets, are designed by engineers at all. Besides, I can't think of any vehicle that has a lid over the door pocket to keep rain out. Seems like it would be incredibly inconvenient to use while sitting in the vehicle.
The GMT900 extended cab benches are a 60/40 split. You could grab just one side of it and it would be sized most appropriately for your truck. You'd probably have to fab some brackets.
I feel like 1/2 of the bed space in a small truck like yours would be uncomfortably close sleeping quarters. You may want to test drive that theory prior to buying materials.

Nice truck! If you are wanting to change the steps out I would consider getting some that offer a little rocker protection since these trucks have a fairly long wheelbase.
They make steps that fold down when the door is opened, but I prefer simpler solutions personally.
