AEV 4.5 hd coils will be stout but you sound heavy so might be perfect. You mention a new rear axle going in but you might want to address the front D44 as well if running 37's.
no look on your door jam you will see the GVWR it is the same as what is on my rubicon recon ie 5700 lb whic was the same as my 2014 rubicon. the gvwr does not change so the heavier your rig was from the factory the less payload you will have. The 5700 lb GVWR does not change.

If I were full timing it I don't think I would go with a pop up camper. If were full timing I would cough up the money for a nicer one of course that would mean a 1 ton at minimum. If full timing it you are going to be loaded a lot more than you think. I think I would still go with the class...
pretty much what i use. I use something similar to this and it just bungies to my spare tire. It has seen the Rubicon trial and Dusy ershim and been to moab many times and never fallen off. Depends on how much stuff I am carrying sometimes it rides in the jeep and some times on the tire...
