Using an open system, using drinking water in the heating loop adds a risk of bacterial contamination.
Our tubing is orange PEX inside ( the one with an Oxygen barrier) and 3/4" rad hose under the truck. I think having a joint flex enough to open a hatch is too much.
You look to be very short on interior storage. All I see is the tall cabinet for clothes, where is your food going? refrigerator? Do you have a spot for shoes? You will need a sliding dinette table if you want to get in or out from the kitchen side.

Absolutely everything in design is compromise and everyone has their preferences. I see huge inconvenience with those stairs combined with no (or poor) cab to cabin access. Now is the time to be sure.

The simplest naming system is date. Put it first and be consistent, you can add more information to the name afterwards if you want or better yet put the information into the metadata when you edit in Lightroom.
