I did try to get some highway speed testing in, but there weren't any straightaways in the Bend area long enough to get the Fuso up to speed...

Sure... It looks like the dual-cab / crew-cab version adds 899 mm (35") to the EarthCruiser. The extra 3 feet brings its length to about 23' long, still a foot shorter than the GXV Patagonia's 24' length. Turning circle diameter is increased from 40' to 49.5'.

After many years using LT285/75R16, I changed to LT305/70R16 - same diameter but almost an inch wider. The ability to run lower air pressure with the larger tires dramatically improved the generally terrible ride quality (on bumpy roads) of my Sportsmobile.
I'm having trouble finding hard numbers on exactly how tall the Earthcruiser FX is. How much taller is it than the EXP?
