I've been using a Garmin GPSmap 62s handheld unit in Mainland Mexico.
You can't beat a unit that can show you where your at, point you with directions to where you want to go and if you have tracking turned on and displayed where you've been, all at the same time.
Foremost would be the place to start. Pictures and documented cost of big ticket items will help assign a value to the build. Any receipts for professionally done work, like mounting the body to the truck will work in your favor.

^ It's not entirely the heaters fault. Condensation will form as the interior surfaces warm up to the dew point temperature. Same for a glass of ice tea that has condensation form on the outside of the glass on a hot day. Only in the camper the condensation is forming on the inside.

The cabs on these trucks have a large glass area. Not sure having it all blown out in a crash or roll over is a good thing. Maybe when the truck is sinking and/or on fire it would be. I can't help but see in my minds eye, heads, arms and torsos being flung about.

I use a 5 gallon water cooler bottle for my fresh water supply. I can refill it at camp grounds, at Walmart refill stations, or exchange it. A Dolfin hand pump from Amazon sits on top.

Regarding a generator, I wouldn't go less than 2000 watt. That size will run anything you can run off a 15amp outlet with room to spare.
