What I see on the outside wouldn't bother me. It's what's going on inside the walls that would.
Relative humidity, inside and outside temperatures will drive the dew point temperature. Even with great insulation, interior walls and surfaces could have moisture condense on them as they warm up.

Adding cabinets and fixtures should help add structure integrity to the build, anything to prevent or restrict racking of the body is a plus. IMO, its the extrusions that add strength to the design and build.

Since newer diesels require ULSD, the type of fuel your vehicle burns could be a limiting factor. With each passing year more and more countries are switching over to ULSD but connecting countries and continents together that currently have ULSD will prove problematic.
