I'd recommend larger gauge wire since the ACR can handle up to 750amps.
And due to the amount of current I'd also recommend going straight to the starter battery's positive post.
On my ACR system I have 0 guage. I too have a frame mounted starter battery (one of two for my 7.3)
Imho as a full-time vanlifer, the solar system you have listed (200wt &100ah) won't be able to keep up with the draw of all the listed 12v items.
Heck, not even sure mine could...
(300wt & 310ah with Victron 100/30 with BS ACR 7620 with dual 130amp alts)

I would coat the new hardware that goes into or through the fiberglass topper with permatex grey, I have done this on my own top and still good years later.
I let it ooze out to make sure it fills any voids then clean promptly.
I didnt have success with marine goop, failed much sooner.
