I like the interior/exterior cabinet idea. A kitchen in that manner sounds like a great idea. You'll feel like you have a whole new van with your "new" engine and trans. That 6.0 is a great, durable motor. I'm getting 17.5 to 18.5 mpg at 75 mph in mine. Best tank of 22 mpg at 65 mph.:)

Grandbys are designed for an 8' bed. You could also put them on a shortbed with the tailgate down.

Is a gasser out of the question for you? As a long time diesel owner (since '84), I'd now go with a gas motor for reliability and cost savings--both for the initial price and repairs. Ford's 7.3 with the 10 speed trans looks good.
