This is the standard way any trailer battery gets charged. Yes, you can drain your car battery if your trailer battery is dead. So don't leave it connected if your car or truck isn't running.

The reason I didnt do that is because my whole underside has the winter package from RVoA, meaning it is all insulation foam. The thermostat is in the wall, above the furnace. The furnace is under the bed. There is an access panel under the mattress so you can get to about 2/3rds of the furnace...

I don't believe that is quite correct. The maximum number of panels a solar controller can handle needs to be computed by looking at its Voc, or maximum voltage out of the panel when there's no load connected to the panel. That is typically around 20V (but can be much higher...
Yup, Michael at RVs of America did those. The bottom display is for the MPPT solar controller, shows me all kinds of stats of the panels and the controller. Then the four switches above it are to turn the tank heater pads on or off. One for each tank.

The thermostat is not in the best place. It is right above the heater, and that results in either you having to set the thermostat to its highest setting, and that might not be enough, and/or the thermostat frequently cycling the heater on and off. Which is not efficient in actually heating up...
There is a lot more storage, and more space overall in the HQ15. It is also way warmer than the HQ12, when you pop open the roof on the HQ12. The good thing about that pop up roof is if you're taller than 6'1". You'll be able to stand in it. As for the fridge, it draws peak 4.5 amps, so...
