The Big 3 make what customers want to buy, it's not like it is some cabal. Total cost (fleet acquisition, fleet maintenance, residual value, fuel economy, aerodynamics at the higher US highway speeds) makes standard cabs the right choice for the vast majority of their fleet tractor customers...
It actually doesn't really have much to do with brand availability. Unlike pretty much any other country in the world, the US places no limits on the length of truck tractor and semitrailer combinations - only the length of the trailer. Curb sniffers are easier to service, get better mileage...

You need a DC to DC charger if you have lead-acid start batteries (you do), and LiFePO4 house batteries. If you don't have LiFePO4 now but might in the future, it might make sense to future-proof your build but isn't necessary today.

If you don't know whether you need a front locker, you don't. When you are going up a slope all the weight is on the rear axle so that is what is getting you up. When you are going down a slope gravity is helping you.
