Well, it's been almost 2 months and I haven't been able to get all the parts to swap over to the factory belt system on VanDOOM.
I finally have a lead on the full Poly Vee system from a 90 E350 so I can can do the install. These things are crazy hard to find.

5.5 is too much IMHO. I would be very concerned with all the add-ons. The 3" might be crappy etc etc. I would pass. Way too many of these around to not wait.
I love the Cherokee. Excellent platform.
There is one similar for sale here in WA state. $53,995. It is an EB and a 2013 model with only 2900 miles. Custom wheels/tires.
Looks very nice. You can use that a a bellweather.

Wow. Just wow. The San Juan islands in WA state have a lot of fun things like this. If you ever take the ferry out to Friday Harbor, just about each island has someone living on it. Fun!
I love the EB Econolines, but if you want better mileage, how about a used Sprinter? I have seen them locally under 20k. I hear reports of 25mpg cruising.
I think your setup is fine. What you need to do is get out there and see how it works, then make corrections/improvements as needed.
The tires are good IMHO. You can always swap them out if you find them inadequate. You might consider gears with the 34" tires.
