I put Falken WILDPEAK A/T TRAIL All- Terrain Radial Tire-255/55R18XL 109V on my 2014 Outlander this weekend. Surprised they are pretty darned quiet. Not much different than the summer tires (Achilles ATR Sport2).

The 6121K41 doesn't have a set screw. 6mm (0.236") shaft diameter on your Camp is close to 1/4" look at a 6333K2. Those ebay tone knobs are sweet as well.
Starboard (HDPE) moves around a lot with temperature changes and is nearly impossible to bond with glue. I wouldn't recommend it for a primary interior build material.
