what is your model year? I believe I read somewhere that in order to bleed the ABS you need to use a MUT (dealer most likely). Not sure thou. Have you consulted the FSM about the bleeding procedure?
Whoa - a 50 amp panel would be a large suitcase.
But not in jest, I use a small foldable to recharge a 24 Ah 5V Li-on bank (8 x 18650 cells) . Works great to recharge phones etc..

Curing Salt has a % of Sodium Nitrate, its listed in their ingredient list. Can't make bacon or ham without a cure.
even "healthy" bacon cured with celery juice powder is just an play in advertising, because CJP contains nitrites and nitrates - but they are natural LOL.

80/20 in a 1.5" x 3" profile isn't going to flex in the over hang section. I'll be overhanging 24". Not worried. Their books have bend moment calculations for every profile if you care to calc it out.
bigger roof space than the average vanagon? I'm looking at some 255 watt panels at 64.5" x 34.8". Maybe fit 2 (doubtful) on a roof? 1 on roof, 3 or 4 on side array?
not sure how well that 8020 hinge system is going to work with the gasket. I believe the gasket needs a minimum gap when closed of 0.25", and the way I understand the hinge is they make are designed for no gap. I'm building something very similar as yours, opted to go with 3 aluminum standard...
