I had the XRC on my Xterra and for the few times I used it, it did very well.
The winch itself is made from all Mile Marker stuff.

Most of the ARB bumpers DO come with the fog light inserts. It just depends on the year of the vehicle. Also, the bumper for the newer vehicles are Air-Bag approved.
With the exception of the 92-97 Trooper (which is NOT air bag approved)

I am planning on building a shelf in the rear if my Liberty to accommodate more items back there. I travel a lot, so I need a space for the suitcase and also my recovery gear without having to dig for everything.
Is your deck easily removable?
Have you thought about using a TwoZone compartment to gain more fridge space? That may be a cheaper solution for you.
We run a MT45 with a TwoZone and it stores enough food for 3 of us for a week.
If you have the space and the means, that 2 fridges would be ideal.

I didn't measure my roof rack mounts like FlyingWil instructed before ordering the Mule rack. The rack is a little smaller then my current rack and therefore we are enlisting the help of Hunter Offroad to help us mount it.

A cheap cover would some panty hose thrown over it. That will also act like a good filter and they are somewhat resistant to freezing.

The new ARB Fridges are expected to arrive in the US in early 2009. ARB is predicting February if all goes as planned. They will be competitively priced with the Engel MT45 and there is a lot of good buzz over this fridge!
The only thing I saw in regards to exposing it to the elements (fire, water) is that it would void the Warranty.
