I think a 4 door Tacoma is one of the most versatile vehicles out there. That's why I bought mine. 4 seats and off road capable, a bed I can put a canopy on if need be, tow anything I'm going to need to. Just all around excellent, plus it should be reliable.
I was looking forward to these tires on the Tacoma. Instead I bought some Michelin X-ice tires for the Honda to replace the Bridgestone Blizzak tires that were slashed. I guess I'm on the Rugged Trails for a while longer.
If you're going to keep it for 20-30 years the Landcruiser would be the better buy. I think the Touareg would eventually bleed you dry. If they both have 4 low and locking diffs I don't think there will be much difference in capabilities.

You want chains, not cables. As far as chain sizes the owners manual has that information. At least Toyota's recommendations for what will work best in stock form.
