Along the lines of what I was thinking, too. However, I was going to say it's great with white wines, like a Pinot Blanc or Grenache Blanc. Then again, I'll eat Brie with anything ... including my fingers.

I was going to recommend the Hankook i*Pike, but the biggest size they come in is a 235/75/15 and it's not an LT tire. I run these on my FWD Toyota, and it's like a snowmobile.

I see Nokian used to make (not sure if they still do) their Hakkapeliitta in a 31x10.50x15 LT. I've owned these tires...
Assuming you've got a rear hitch, a WARN Multi-Mount would be a great way to mount your winch on the rear. Just buy the winch carrier and wiring. You can insert the carrier into the receiver when you need to.

I saw your car last August or September at the Rally Cross in Hillsboro. Great ride (I event took a picture of it!). My good friend in Wisconsin has a Loyale he's building up, too.

My vote would be a four-door Suzuki Sidekick/Geo Tracker/Suzuki Grand Vitara/Chevrolet Tracker.
- Inexpensive
- Fairly easy to work on
- Fairly easy to find parts
- Reliable (at least mine is)
- Realy 4WD system with t-case
- Decent aftermarket support
.
The only issue might be sleeping in one...
