I use Falken WildPeak A/T (325/80-16) and that size has now 'disappeared' from their website. I was guessing that the 16" size would go away someday, so I bought two sets figuring when I wore those out I'd switch to 17s.
I believe the long wheelbase FGs are spec'ed for up to a 16' 'body length'. Here are helpful links to the Fuso 'Body Builder Drawing and Support apart 1 & 2'

Those Falken WildPeak A/T (325/80-16) DO NOT have the load rating to match the load rating of the FG. So down-graded load capacity. But size wise, no issues on my truck
I use Falken WildPeak A/T (325/80-16) on my '02 FG. They are just shy of 37" diameter and 13.25" wide. No rubbing. Wheels/tires have to be straight ahead to lift the cab or it will hit them.
I would add that you might want to make sure that climbing in and out of a cabover truck on a regular basis is not going to be a problem for your back(s). A much different 'action' then getting in and out of a LandCruiser.
When I was in California I had my Fuso FG registered as an RV and both Progressive and State Farm had zero issues insuring it. Both were around $100-$125 per year (3 years ago). It was liability only, so perhaps that is the difference?

The sensors (external) are small enough to fit on the inside valve stem (I have flush mounts for stems on both the inside and outside of the rims), between the rim and brake, so they seem pretty protected from knock-off (and thief-proof in that location)...
