285's on stock offset wheels still rubbed a bit in the front on minor obstacles, ride was super harsh compared to stock. Some people don't mind a lumber wagon, but 90+% of our driving was on road.

I'll third for tires. 265/75R16 or 17. Chassis is very susceptible to NVH from tire hum & rumble --> choose them carefully with the advise from other Gen 3 owners. I had good luck with BFG KO2, I did 3 sets of them over the 120K miles of ownership on my '05. Falken Wildpeak A/T were unbearable.

Let me know if you find shocks for the front that are not KYB (OEM) or ridiculously expensive. I do have Bilstein in the rear of my '14, unsuccessful finding anything but KYB for the front, so have not changed them out yet.
I have an Alpicool G22 and it is excellent. I also have an Edgestar 45L - its good as well, but large for most of my uses these days. It sits in the basement plugged in as a beverage cooler.
