Take a look at the Max Burton cooker, temp is selectable and is a nice unit. Cooking compartment isn't as big as I would like but it certainly gets the job done. I line mine with foil for easy quick cleanup. Runs about 60 bucks from Amazon.
It would help to know the actual Mfgr. of your unit not the marketing company. Like some many other things there are really very few Mfgrs. of this type of appliance.
I have an idea that may provide you a measure of safety. Spice the cord between the Vair clamps and the Vair using a pair Anderson connectors making sure the end from the compressor will mate with your existing wiring? If you want to use clamps reconnect Voila!
I was going to say the same thing but didn't want to seem geeky. BTW I thought it said 'Eat at Joes Bar and Grill'. Westminster Abbey is another must see, the Poets wing was incredible, Chaucer, Tennyson etc.
Tires, suspension, sliders will get you 90% of the places you want to go. A rack in my opinion should be way down the line, the factory rack can handle a lot of gear.

Regardless of what you put in there and all the external security available I for one am very uncomfortable without some added hard mounted hardware to prevent or delay theft? Just my old school .02.
One place you are going to have to wing it is the struts that returned back to the hood. Certainly doable just need to find the new extended length and fab a couple up?
