An Anderson Power Pole connector would be a good choice at that splice if you do elect to shorten the cable. Sounds like you are up and running ,congrats on cold beverages!!
Look up Adventure Wired, he's in the San Diego area. You could also get a new battery cage from Pelfrey and run a much larger (group 31) single battery for your needs. For most a second battery is over kill.
You will need to buy an adapter that allows you to hook a delivery hose up to the oven. It sounds like your oven is set up to accept the green 1 Lbs bottles. The adapter can be found on Amazon as well as Ebay.
Just be ready for 5/16 negative threads and 3/8 positive threads on some batteries. I suppose it's to protect us from reversing the cables? Easily mitigated by carrying a set of each size posts
Having used a NL for several years I migrated to a CTEK 250s and couldn't be happier. It solves boosts the voltage to the house battery and negates the need for a solar controller and is very compact. Oh yeah 1/2 price.
Actually carpet is pretty slippery? They make a non skid tape like product that is used on tractors and heavy equipment however I'm not sure how well it would adhere to wood.
Is there anyone local to you that will let you try their remote? Or perhaps a visit to a 4 Wheel Parts retail store, they should let you try another remote?
If you do jump it make sure you have some way of cutting the power in a hurry, otherwise you may smell a bunch of burnt. I would suggest a visual inspection of the interior contactor box if you can access?
