Thanks Tiki! I actually emailed Cognito and got a response really quickly (within an hour or so!). They confirmed that I can run the stock wheels and tires with this setup but cautioned that 285s might rub. I'm thinking that means at full droop and lock so I'll try it out and see what happens. I also wanted to share that they cautioned me not to lift the front more than 2.5" for sake of the CVs, tie rods, and down travel.

I was looking at possibly getting the Icon delta joint UCAs but they're $350 more expensive and I can't really understand why

With the trucks you can rub multiple places depending on what wheel setup you go with: sway bar, UCA, rear fender, front fender. The wheel wells are not very forgiving.
