60/40 Door Hinge Question

My '99 Ford has side 60/40 doors. The rear '40' door will not open as far as I would like it to (cooking setup sits at a steep angle against it, ect.) and I was thinking about trimming the hinge stop to facilitate another inch or two of opening. Has any of y'all done this? Any reason why I shouldn't before I go to town on it?

I just went out and looked at my van I do not see any reason you could not move the stop back a little bit more. It would be nice to put an rv door stop on it to hold it open no matter how the van is sitting.

My door will open all the way, until it's against the body.... Maybe take a look at a later model van & see what the difference is?
