Cinco de Mayo - post your best Guacamole recipe!!!

I saw the Barefoot Contessa's guacamole recipe the other day that looks pretty good, I think I'm going to make it tonight. link
 
This is my favorite Guacamole recipe..

Ingredients

* 2 large avocados (or 3 small ones)
* juice of 2 limes (about 1/4 cup)
* 1 medium tomato (or 2 roma tomatoes), chopped
* 3/4 cup chopped fresh cilantro
* 1/3 cup chopped green onion
* 1 teaspoon minced jalapeño pepper (red or green)
* 1 teaspoon sea salt

Directions

1. Put the avocado flesh into a bowl. Add the lime juice. Mash the avocado and lime juice together with a fork until creamy.
2. Fold in tomato, cilantro, green onion, jalapeño pepper, and sea salt.

This guacamole works especially well as a dip with tortilla chips. I also add more jalapeno cause I really love spicy food.

Here's a backpacking version for you - nice and compact...

4 avocados
1 medium tomato
1 tablespoon powdered onion
1 tablespoon salt
4 packets of lemon juice from long john silvers or other restaurant - this is optional - if you plan to eat the guacamole right away the juice is not needed - it's only there for keeping the guacamole from turning dark.

The above isn't the best recipe for home use, but it works great on the trail.

It's hard to carry a bag of chips with you - You can carry a stack of corn tortillas (which lay flat) and cook them on the grill until they are crispy - basically you're making your own chips out of the flat stacking corn tortillas. Break them up and then dip them in the guacamole.
 
My recipe for Guacamole: ask Nicaraguan wife to make it for me :-D

...and luckily, she leaves out the hard-boiled egg from the traditional Nica recipe, yuck.

Jokes aside, when she moved to the US, I introduced her to my Mexicany guac recipe, which she liked more than the Nica one. Over the last few years, with just a few small changes to my recipe, we've developed what many people say is the best guacamole that they have ever had. I've never written it down, but I might do that later and post up here.

One ingredient that we sometimes use is finely ground dried chipotle peppers; the smokey flavor is a nice contrast to the smooth avocados.



rmirandayopo, those are some awesome photos, but sugar and vinegar? I'm intrigued... can you post up your complete recipe?
 
Leave out the Lime - Add Lemon instead

4 Avocados Diced
Half Red Onion Diced more if needed
2 Serrano Peppers with seeds Small Dice
1 Roma Tomato Diced minus Seeds
Handful of Cilantro Chopped
Juice from 1 1/2 Lemons
Salt and Pepper to taste

Put ingredients into bowl and mix lightly. I like my chunky. You can still mash it up if you like. Enjoy.
