Crazy about Jalapenos!

I go through phases where I can't get enough of a certain type of food, right now it's jalapenos (or most any spicy food). I just ate a couple of them raw because I couldn't wait for them to cook.

Does anybody have any great spicy recipes? I've tried those jalapeno poppers that they have in the frozen food section and they have no fire.

I've also been perusing recipes online, but I'd like to try something that somebody here already loves. :chowtime: :sombrero:

A recipe from Puerto Vallarta: slice them peppers and drop some oil in a pan and fry 'em up just a little 'till the seeds show a touch of brown. In a bowl, put a teaspoon of honey in the bottom, the hot sliced peppers atop, and then douse with soy sauce. Eat as is. :chowtime:

Wow! That was easy enough I just tried it. It's excellent, but I also got the hottest one yet!

I like to slice them in half and clean out the seeds and rib meat then stuff with cream cheese wrap with bacon held together with a tooth pick and grilled rather quickly with Ranch dressing for dippin! Oh and the hotter the pepper the better!

Heat up some chocolate and do some dipping. I had some local dipped peppers in Italy - they were like a mild version of a Kung-Pow and the mix of flavors were a treat with an espresso on the side.

The local Italian American social club (Bar) serves them most sundays fried and topped on a roast pork sammich. Delicious!

I also like them on grilled cheese, with pasta, and Tuna.

I smoke Jalapenos (and Habaneros too) over peach/apple/cherry for about 22-hours. They are crazy good in guacamole for starters. And try adding them (minced) to basil pesto. It'll change you!

Cajuns, Creole, or just about anyone from the New Orleans area. My wife's from there and they eat hot food all the time. MMmmmm GOOOOOOOOD.

when I crave for spicy stuff, I just go to the local King Taco and get extra chile rojo. All over the tacos and sopes.

Just a different take: We call them rat tails. Do not remove stem. Slice 3/4 lengthwise. Deseed if you want. Stuff with cheese. Wrap/Coat pepper with breakfast(or another) sausage and deep fry. We have also added a little bit of egg to the sausage before packing it around the pepper. Another is to coat with a batter(onion ring type) after sausage is applied and deep fry....yummmmmmmy!

Edit: It is 3 am and now I am hungry for rat tails. I guess left over Polish food from Easter will have to do:chef:
