It likely won't work, but time will tell; the new Defenders have a fabric roof option so it's not a total rule-out but I'm not familiar with any company actively pursuing a pop top as an option, and the manufacturing pictures I've seen show quite an "ingress" of vehicle structure into the roof area. The Ineos might work but they are currently testing prototypes so there's none in the hands of consumers who would take an angle grinder to the roof to try it out, but if you are looking at a 3+ year timeline, I think there might be something worth looking at there. Sooner than that though, no dice for either the new Defender or the Ineos, hence the question on timeline. In terms of pricing, Defender 110 is $60k and up (and up and up and up) depending on options; I imagine the 130 will be more spendy. The Grenadier is aiming for $50k Euro, which will likely translate to a $60k-$80k price in North America but nothing's been confirmed yet.
You could look to importing a Troopy with an Alu-cab style pop top on it. South Africa and Australia would be the best markets to look to for that. You could also look to the 4x4 Sprinters or even something like the Sportsmobile, if you're not familar. All the advantages of a body-on-frame truck, but in an enclosed van space with a built in pop-top.
