Spent a couple more hours this morning finishing off the plywood pieces and cutting the holes for the sink and stove. Also spent some time beefing up a couple areas that will be higher stress, like where the hinges will be. I picked up a damaged piece of Formica on the way home that should work well. I'll try and pick up the last pieces I need for doors and such tonight along with some drawer slides to start the drawers. The 3', 400lb slides I have aren't going to work... So they'll be up for sale soon if anyone needs something like that.
Anyway, on with a couple pictures... Doesn't look much different from the outside though:
Here are the adjustable table legs I'm going to use. One on the main cabinet, and one on the fold out area.
Should have time to get the formica tops on tomorrow... Have to see what the best way to cut them is.

The stove and sink are just off of Ebay... Looking at them now, the seem to all be under the Dometic brand name instead of SMEV like this, even though they are the same things, just re-labeled.
The table legs were from an online store, but looking quickly now, I can't find it. I'll look back through some bookmarks and see if I can find the link.
**EDIT** Here are the legs I have, but you should be able to find them cheaper. I think mine were $40 for the pair, but it was about 2 years ago as I bought them for my last trailer and never used them.

Got a little more done this weekend... Some of the little details are taking up a lot of time. Had to make some changes to some of the drawer sizes because of the spaces things worked out to be. A lot of the internal structure was seat of the pants and the 1/2" here and 1/2" there made a difference in a couple areas. The 36" slide that I was going to use on the end for a cooler stand or table extension. Now it will be another drawer, probably for cutlery, and the one I was going to use for cutlery I was able to expand. Either way, it should still turn out fine, just a little different with the drawer configuration.
I also cut out the sliding mechanism that I'm going to try and use. Pictures follow:

The slide pieces... It actually slides really well. I'm impressed so far. 1x2 Maple on a ripped piece of 2x4 Trex hand-rail. I was going to use roller-blade wheels and bearings, but I wasn't able to make the sites strong enough to support the weight with the trailer bouncing. I just wish I realized the change sooner. The back drawers are smaller because of the space I was leaving underneath for the wheels. In the end I think this will work much better.
Lots of saw dust... This was completely clean before I started. Ripping the Trex killed the blade, glad I waited until towards the end to do that one:

Looking really good! Not sure how I missed this thread for so long.
On the slides, is the drawer able to be slid out without dropping the legs, i.e. cantilevered? or are you relying solely on the legs to support the end?

Unfortunately, I wasn't able to come up with a way to have it self supporting. Since the kitchen is the same length as the trailer width, it really limited my options to something that works like a full extension drawer slide with two integrated slide mechanisms. Those are way too expensive to buy in this size and capacity, and too complicated to be worth me making. The ball bearing/steel angle type that I've seen and envied in other builds need additional length so that the steel can still be on the bearings when fully extended. I would have had to cut down on the length of the kitchen to do it that way, which I wasn't willing to do. So the only way I'll be able to use this is with the legs extended down. On the plus side, they seem like they're going to work pretty well/quickly. We'll see. I should be varnishing this weekend and assembly in the trailer would be the following weekend. If only I could stop working 11-12 hour days I might actually be able to spend some time during the week on it... But that doesn't seem likely in the near term.

LOL! That's awesome! Never ceases to amaze me at the stuff people pick up on in pictures. Even looking at it now it'd be a stretch for me to make out the letters if I didn't know the hat.

Just a couple pictures, of it completed and waiting to be varnished. This weekend I should be mounting it in the trailer so I can give some action/setup shots. I'm pretty happy with it though. Took longer than I thought it would, but then my projects always do. I probably have about 40 hours into it so far.
All the doors installed. The two on the left don't hinge, but can be pulled out, because of the clearances with the trailer opening:
And with all the doors/drawer open. I'll definitely be able to make all my stuff fit. Just have to see how best to organize things. The two plastic containers fit in the hole beneath them. That way they can be taken out easily before the unit is flipped over (opening or closing). I figure one will be for cooking supplies like spices, Pam, etc. and one will be for dry foods. The drawer that isn't very deep will be used for cutlery and utensils. I still have to decide where the best place will be for dishes, pots, pans, towels and all the other kitchen supplies. That may take some playing around with. A paper towel holder will be going on the vertical surface near above the main counter once I varnish.
