When the fridge is empty and not in use. Should it be proped open (like a standard household fridge) or is it ok to leave closed?

Yes. prop it open with a open box of arm&hammer(tm) inside to de-funktify......

I prop open my ARB and it seems to work well. I cover it with a light blanket and wash it when I use it again.

I am now keeping it permanently mounted full time in my van.
I guess I will have to figure something out to prop it up that won't damage it or shift while driving around town.
