The load rating for 255's is still over 3000#'s so plenty of capacity for a van with a gvwr of between 8800 - 9500 pounds.

I had the Camburg kit with 285/75/16's and I didn't need to cut my fenders. I had to trim the front plastic valance on the bumper though, but that literally took 2 minutes with a sawzall. I wouldn't worry about rubbing if you want to run the 285. If you try to stuff anything larger, then you will need to cut or replace with flared fiberglass fenders.
