On the Transit chassis / Cab, I can tell you having done 1,000's of miles with them in Europe they are very, very good places to be as a driver. Tows well (below what I took for a 900 mile trip from us in France to Holland ( trainweight was 5,750 Kgs or 12,650 Lbs. in your system ) and the cab has plenty of space to put a lot of junk (sorry, essentials) in... Many miles were driven with a horse container on the back and flex was never an issue. They just do the job.
I have a plan to do a conversion like this, based on an Iveco Daily chassis cab. We have several and love them (diesel ones) and they can be converted from RWD to proper 4WD relatively simple as they use a divorced transferbox. Because of height issues, our conversion will have to have a lift up roof making things a bit more complicated.
