Has anyone here converted their Fuso to run on WVO? If so, can you explain your setup?

It would be a nice option to have. It is no different than converting any other diesel vehicle. You still need regular diesel (or even b99) for start up and shut down. i have seen unimogs with kits installed. MAN from germany I think makes a kit.

I'd be interested to hear as well. I won't have my hand on a Fuso for a few years but it's in the plan. So far I've converted my last two trucks on WVO and it's quite a simple process, just a matter of a second tank, a heated fuel filter, a heat exchanger and a couple 3 way valves, that's it!
It would be useful to firstly determine what type of injection pump would be used. The indirect injection are better suited than the direct one. I'm still slowly learning on the Fuso so don't know which one they have, sorry.

If a conversion was done , where and how available is the fuel going to be? If everyone starts to run it will there be enough available?

WVO is the stuff you get from restaurant grease pits. Then you just have to filter out the crap, and you're good to go. That gives you an idea about availability.
There was a place near me that sold filtered WVO for about $2- per gallon vs. B99 at $450 + a gallon.
That place and the bio-diesel specialty mechanic near me both shut their doors in the past few months.
There has been a major anti-biodiesel thing going on ever since all the vehicles got changed back in 2007-2008 here in the USA.
IMO, if everyone were to use the stuff, there would be nowhere near enough to go around, its just a good alternative/option to have if your diesel engine can run on it. But it appears the option is getting slimmer and slimmer as we go.

How about growing your own diesel replacement, have a look at this tree.

Before starting any conversion you'd be best to find a WVO source. I found 3-4 Japanese restaurants nearby my house that were willing to give me or sell for cheap their oil once they were done cooking with it. That way you get to build up a good reserve that will settle nicely by the time your conversion is ready to go... No point doing all the conversion work to realize you have no fuel for it.

I usually have extra fuel that makes its way to friends for about $.50/L and free for those on road trips passing by...
The general issue with WVO availability is that big companies try to monopolize the pick up of used oil from all local restaurants and getting them hooked on by contracts, sucks for the little guys...
