Does anyone have any aftermarket recommendations on matching front and rear seat covers?

2001-2002 - I'd go with the finest cheapest ones on the market: The Cabelas Trailgear ones. 2003-2006 - Only a couple companies make air bag compatible seat covers and they're $$ so if just doing it to cover torn leather, might be more cost effective to have the seats reupholstered instead.

My only issue is the rear seat configuration. Because it's 60:40 with an armrest that folds out I can't find anything perfectly fits it all.

It's marketed for the Gen 4 Shogun/Pajero, but the rear seats from that generation sure look identical to me - also looks like the center has an area that folds down. I'd try looking on ebay UK https://www.ebay.co.uk/ for part SP037134 if you want to give it a shot.
