A Subaru will do 90% of the trails you will see on overlanding site . Trust me I’m all for mods but something to think about if you go aftermarket on the lift and have a suspension issue you may find the dealer unwilling to do a fix under warranty.

Did the TAT in 2018 with a stock 2015 JKUR, no problems. I had a winch that I did use for moving a tree but never for recovery.

I would get a tailgate table and a frame mounted tire carrier (just because that's the first item I always add to a save my tailgate). Get some rubbermaid bins that stack for your camping gear. Throw in a recovery kit and you're good unless you want to sleep in the Jeep. Then it's just camping/outdoor gear selection from there. The Jeeps number one problem is payload and quite a few of us on here are overloaded.

That's also on my list.
Currently prioritizing a list of items that I will need vs want.
Also in what order to incorporate the items.
