I had the same concerns.
The way Allstate and I went about it was insuring it as a "Ford RV" and we just agreed upon a price that the truck was worth and what would be paid incase something happened to it. They were not concerned with he fact that i was the one outfitting the RV. If I remember correctly they asked if I was modifying the any of the structure of the box or safety components of the chassis. I told them that I wasn't (and i am not doing any of those things) and everything would still be Ford OEM/Ambo manufacturer spec. They said ok and that was that.
