Landjäger sausage

Not sure how many have tried Landjäger, another pre-refrigeration dried meat staple similar to beef jerky of the sausage world. The plus of landjäger is that one can leave it unrefrigerated for months and still use it to make excellent meals. First used by the mounted forest rangers of Bavaria for centuries and the staple protein source for the German army and wartime populace for a number of years this stuff makes awesome meals, boiled and then added in to dishes or fried up as as a side dish.

The bad thing about landjäger is that it's so good it needs to be kept under lock and key if anyone starts drinking beer nearby. :)

Never heard of it... what is it made out of... or do I not want to know...:elkgrin: Available in bigger stores or only in specialty shops?:steak:

What is the basis of this sausage (beef, pork)?
Where is the secret stash....where do you find it in Alberta.

Safeway sells it here... it's pork.

Best is at the German shop on Elbow Drive and Heritage though. ;)

Both, however quality varies widely. If you can find a German specialty butcher in your area they will fix you up. ;)

I love it. I discovered it while living in Germany. I have found it here and there in the states. I don't have the disipline to keep it in the house any longer than a day after purchase though.

I've taken Freybe's on trips a few times and it's tasty.

Localy we also have 'Calgary Meats &Deli' on Edmonton trail and about 12th st.
which makes some buffalo landjäger thats pretty amazing. :)

Nothing much to add except that I've consumed many, many links of the stuff and after camping with one of Freybe's sausage meisters I've learned to buy sausage from small craft type operations where possible. The big places are very concerned with adding as little meat as possible. My friend said the goal was to make tubular shaped water that could be sliced.

My local deli has it and its great! I take it on all my trips.

I actually have a bag of mix in my freezer to make my own but I haven't gotten around to trying it yet.
