2) For backpacking I wouldn't carry a flashlight because a headlamp does everything a flashlight does, hands free. But if you're worried about your headlamp failing you could take a small backup flashlight.
.

I want to take both the headlamp and the flashlight (just in case)

I would recommend a purifier drinking straw, or a pump-style purifier. Water is necessary, hard to find in AZ and heavy. Depending on the time of year, you may also be able to forgo a tent, but you can get some pretty light ones at REI - for a price. I would recommend a pad regardless The Luci light is an excellent suggestion, just make sure you hang it on the outside of your pack so it can get some sunlight to charge. GSI cookware is decent and a pocket rocket butane stove would complete your kitchen. I cut a scrubby sponge in half and carry a small bottle of biodegradable soap for cleanup. For lighting, I recently picked up a J5 tactical v300. 1 AA battery and it lights up the night. I also have a black diamond apollo lantern.

And of course, instead of lugging around a bunch of beer, a flask of whiskey or tequila.
