Mattress Foam for Winter Camping (memory foam alternatives)

Need to make a 3" mattress for a lightly insulated pop-top camper and can't, won't, and don't want to use memory foam since it gets rock hard in winter, even with a heater in the cabin. Exped mat is a possibility due to the R value but don't feel like opening the valve and folding it in half to store it with the top down then pumping it up to use it, would prefer to find some kind of suitable (non-memory) foam and make two pieces that stack while stored.

Latex mattress. Mold resistant, non-memory and as far as I can tell is not affected by temperature.
Cons are expensive and heavy.

Yes we have a hybrid latex at home. Coil springs with 5" of latex. No petroleum and the most comfortable bed I've slept on. 3" though of any mattress?

I’m using 1/2” closed cell foam under my REI 3.5“ Camprest (Thermarest knockoff). Have used that combo for years in tents on the worst ground and its like my bed at home. Lightweight. See no reason to change now, but time will tell.
