Awesome looking trip. question for a newbie to this area - is there a way to link up the Mojave and Death Valley on dirt tracks? Or do you have to skip over to the highway?

Unfortunately, there are two major impediments to a direct off-pavement approach to Death Valley: Fort Irwin and China Lake NWC, which are adjacent the Park's southern boundary . Both are closed to public access, so at some point you'll need to hit the highway for a spell to bypass them.
There's also the issue of refueling. Assuming you're contemplating running the 160 miles of the Mojave Road and exiting onto I-15 at the Mannix siding, there are not too many places to gas up in that neck of the desert, and everything is a long ways from everything else. Baker is about thirty miles east, with the next gas at Shoshone about another 60 miles further on. Barstow is about 30 miles west, Kramer Junction another 30 past that, and Ridgecrest another 50 beyond there. Last gas headed north on 178 towards DV is in Trona. There is gas available in the Park at Stovepipe Wells (regular only), Furnace Creek, and at Panamint Springs. This last tends to be stratospherically priced, however...
That said, there are a number of feasible routes that have extended off highway travel opportunities, and visit some fairly isolated areas. I've traveled a fair amount in the region, and would be glad to share suggestions.
