I'm fairly certain this vehicle was built by Outback Proven as a show/demo vehicle. I believe it was listed in the Kaymar promo available on AT Overland's site, here: http://adventuretrailers.com/wp-content/uploads/2016/02/KaymarBumpers.pdf

IMO, the high capacity fuel tank and Kaymar rear bar make it a really interesting and unique vehicle. Definitely a turn key expo rig that is suitable for DD duties.

However, that's a pretty easy thing to find out on your own. Fill up a jerry can, or two, and start driving. When your tank gets to "E" (the amber LED on the dash will illuminate). keep driving (on roads without heavy traffic) until you run out of fuel and take note of the needle position on the fuel gauge.

I've used one in my Tacoma for a few years now. You can program the tank capacity of your vehicle in the settings and after a few fuel ups the gauge will calibrate to your engine's rate of fuel consumption. The more you use it, the more accurate the estimated range to empty will be.
I've spent a lot of time wiring the accessories in my Tacoma. Take a few photos of the engine bay (specifically around the battery and interior fuse box) and a few shots of the area around your switch panel in the cab.

I’m the one that arranged modding this vehicle in Australia, along with My Mate David from Kaymar, and it’s a hell of a story. It was originally purchased from Finlay Toyota in Las Vegas in July 2012 and was immediately sent down to Melbourne, Victoria where it was passed around several manufacturers including ARB, Kaymar, Long Range Automotive, Piranha 4X4, and others. It was sent back to the US arriving days before SEMA Show 2012. We didn't have time to get the canopy on before the show so was displayed without it. Right after the show it had several other mods including the Rhino-Rack that was a generic fit kit since there wasn't a backbone available for that vehicle. We added the Lightforce and several other small items, but mostly everything on it is prototypes including the LRA, Bullbar, Rear Bar, Headlight wiring, SuperLoom, Power Shower kit, and probably a few other things.
As you've found out by now the fuel gauge reads correct the entire time since the sending unit is the same height and the tank is just wider and longer.
It was at SEMA for 2 years and has been to all the Overland Expo's and Overland Rally Series in the NW, NE, and SE, and FJ Summit. She's never had any accidents, any mechanical issues, and well maintained.
