One of my favorite rainy weather trail meals is Backpacker's Pantry Thai Green Curry With Rice Vermicelli.
It has that creamy coconut base, a subtle spiciness, deep flavors and a really enjoyable texture. I recommend adding Olec Sambal (or Sriracha if ya basic) and chopped cashews to the final product.
