Rack of Lamb in Utah's Grand Staircase!

Many of you know that my buddy Brian and I took an epic overlanding journey through south-central Utah last October and did about 250 miles on the dirt. We went off-road at Big Water, Utah near the Glen Canyon Dam and went north on Croton Road into the Escalante Grand Staircase NM. Then onto the Circle Bluffs, the Burr Trail, Capitol Reef, Dixie NF, Boulder then home spending the last night on the Mojave Road.

We resolved to eat well, of course! At one of the incredible campsites we found off of Egypt Road in the Grand Staircase, I cooked up a simple, gourmet meal of Rack of Lamb, fingerling potatoes and sugar snap peas. I made a video of this cook with the intense red rock of Utah as a backdrop!
