rear seat replacement for a 95 RRC LWB

we just had another child, so now i have 2 kids. i currently run without the drivers side rear seat as that is where my ARB fridge goes. i'd like to put the fridge in the middle between the 2 car seats but to do it i would need a removable center seat. the RRC's passenger side rear seat is part of the center seat.. so, i'm wondering if anyone has ever installed a different set of individual rear seats to allow empty space between them? if so, which seats would be a good choice?

I have a friend who has installed two front seats in the back but there is limited room for a fridge in between (read: none). May be better to get an old 60 section to butcher down to a 40 size and then cover the butchery w/a seat cover, just my $.02.

has anyone ever tried to put drawers and then a lower profile seat on top of them? the seats could be lower profile assuming i didn't care about the folding aspect of them.
