Super cool! I’ve always thought some type of camper...canopy, slide-in, etc...on a service body is the way to go. You’ve upped the ante with the pop top. ?

This is what I am talking about. The best part is that you can still buy these cutaway chassis cab Econolines brand new for a little over $30K so in theory you can recreate this build completely new. Definitely looking forward to a build thread and/or learning more.
