The table tops are almost there. Just need to resize them so they fit in the Skottle Carry Bag. We originally made them just a little to big!
I will take suggestion on any new ideas!

I am torn on maybe a partial "lip" to prevent warmed items from going over the side.

Jerry, will you be coming to the Expo East this year? One of our camping buddies has one and we all love it. The Scottle will be the perfect addition to my camping kit. I'm looking to get one at the Expo East if you are there.

Yes, I will be at Expo East, however, if you want a Skottle Grill, go to BlueRidge Overland Gear's booth to buy one. He is our east coast dealer. I am flying in and will be hanging out with both BlueRidge and Goose Gear. Go as early as possible to get your Skottle as BlueRidge has a very limited supply. Don't wait he will run out.

Peri-Peri Chicken

A recipe for those who want to try something different with their Skottle grills.
A South African recipe originally from Mozambique

Try it and report back!



Peri-Peri Chicken

1 whole chicken cut into pieces (skin on)
6 drum sticks (skin on)
6 Tbsp of freshly squeezed lemon juice (2 lemons)
1 Tbsp Vinegar
1/4 cup Olive Oil
1/2 onion, finely chopped
4 to 5 cloves of garlic (grated on a microplane)
2 tsp salt
1 tsp freshly ground black pepper
1 tsp cayenne pepper
1 Tbsp chili powder
1 Tbsp paprika
1 tsp dried oregano
1/2 tsp ginger
1 bottle peri-peri sauce (hot) available from Cost Plus, Walmart and other specialty markets

Cut a few slits into the chicken and place the chicken in a large ziploc bag or bowl.
Combine the rest of the ingredients in a bowl and whisk to combine.
Pour this marinade over the chicken making sure all the chicken is coated. Seal the bag and place on a tray to make sure nothing leaks.
Refrigerate for at least 3 hours, longer if possible - Don't miss this step.

Preheat the Skottle Grill. Remove chicken from the marinade but don't discard the marinade.
Grill on both sides until nicely browned and get some good grill marks. Do this in batches.
Place all the chicken back in the skottle, pour over the reserved marinade and simmer, covered, for about 30 to 40 minutes until the internal temp reaches 160*F. Remove the chicken from the skottle, cover with foil and let it rest for 5 to 10 minutes. The internal temp will come up to 165*F which is the perfect temp for moist and juicy chicken.

Serve with rice and a salad


Tech: Nando's Peri Peri Sauce can be found on the internet, at WalMart or made from scratch.
