Go stock.... Nothing you are planning will even stress the stock tranny. If you are worried, add a bigger cooler.

I'm surprised the drag strip trans builder did not at least suggest a shift kit, better sun gear shell and Corvette servo bare minimum.
But, like you say the original lasted 319,00 miles.
Sounds like a reasonably knowledgable, honest guy.

It is getting all of those mods. The only thing he did not recommend was the 4l65e planatary upgrade as he said it was $400 more and would not be worth it.

I'd say he is right. If you don't have a factory trans cooler add one, if you do make sure you flush the lines and clean the fins with a spray nozzle on your hose. I don't recall Chevy making more than one size factory trans cooler. My last one I cribbed was from a factory diesel 2500 pickup. It and the lines were cheap from the wrecking yard.
