ive wired in a hidden fuel cutoff switch in a few different vehicles in the past. pretty easy to do and nothing can drive away without a fuel source.

I also have a quick release steering wheel in one of our little race cars. lugging around a steering wheel is kinda a pita though.

My favorite theft deterrents have been:

Battery disconnects.
Snorkel plugs.
Pulled fuses.

There are much more effective/fool-proof measures, but the above three are deviously simple. No air or spark, no ignition.
