Water Tank Plan & Two Plumbing Questions

So my 16 gallon water tank arrived today. I have a city/bucket intake arriving tomorrow, a pump (accumulator not needed for this pump), and a strainer.
Everything makes sense to me except an overfill/over pressure relief valve and what type of line to use... Here are my questions in a more clarified form.

1) It seems to me that i need some sort of overpressure valve/vent combo for filling the tank - otherwise it had better be able to hold the pressure generated from filling with a hose. Am i missing something here? If not i aparently am clueless on what this is called - when i search on amazon or google I find nothing.

2) I get why i need to use flexible hose near the pump. Why not use it on the run to my sink as well? What would the benefit be to having hard abs or whatever home despot sells? It seems like hard pipe would be more of a pain to assemble and route?

1-most rv tanks have a overflow hose that dumps on the ground near the fill location. That way when it's full you see it dumping on the ground and know when to stop filling.

2-flexible hose is most likely fine for everything. I think it will wear faster then hard pipe though, so make it accessible for replacement.

All you really need is a fitting on top of the tank with a length of tubing going up for maybe 6" and then you could loop it back down and outside if you wanted. It might siphon what is in the tubing, but as long as you do not have a draw tube going down into the tank, it will stop draining when the level matches the top of the tank. I think that you would have to allow for some expansion in the system if the water/air in the tank is exposed to heat.

I would use the clear flexible braided hose the you see used on dishwashers and disposals.

My setup is pretty simple, but as far as plumbing, I'm using all flex tubing of the push-in quick connect variety.
